Description

Gooey from scratch brownies loaded with chocolate and topped with a creamy chocolate cream cheese frosting.

Ingredients

Scale

For the brownies:

  • 2 sticks salted butter
  • 8 oz chopped semi-sweet chocolate
  • 1 3/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup cocoa powder
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • 1 1/4 cups all purpose flour
  • 3 whole eggs
  • 2 egg yolks

For the frosting:

  • 4 tbsp butter, room temperature
  • 4 oz cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla
  • 1/4 cup cocoa powder
  • 1/8 tsp salt

Instructions

For the brownies:

  1. Preheat the oven to 350 degrees and spray a 9×13 pan with cooking spray and then line the bottom with parchment paper so the side are hanging up and over the edge of the pan then spray again.
  2. In a small saucepan, add 8 oz of chopped chocolate, cocoa powder and butter. Heat over medium heat, stirring often until chocolate is completely melted and the mixture is smooth.
  3. In a medium sized bowl combine flour and salt.
  4. In a separate medium sized bowl add sugars and vanilla.
  5. Once your chocolate mixture has cooled slightly, add your eggs and egg yolks and stir until smooth.
  6. Add egg/chocolate mixture to the sugar mixture and stir until smooth.
  7. Add wet mixture to flour mixture and fold it together until no flour streaks remain.
  8. Spread into greased 9×13 pan and bake for 30-35 minutes or until a toothpick entered in the center comes out clean or with a few moist crumbs on it.
  9. Remove and allow to cool completely while you make the frosting.

For the frosting:

  1. In a stand mixer or with a hand mixer, cream together butter and cream cheese until completely smooth, 4-5 minutes.
  2. Slowly add powdered sugar and mix on low until powdered sugar is mixed in.
  3. Add salt and cocoa powder and mix on low until combined.
  4. Turn mixer to medium/high and beat for 3-5 minutes until fluffy and smooth.
  5. Frost cooled brownies with frosting, cut into squares and serve.

This is not a joke, I repeat this is not a joke! This is not a joke, I repeat this is not a joke!

It’s been over a year since I’ve had a new recipe on the blog and I’m so happy to report that I’m back and have a brand new recipe you don’t want to miss!

If you haven’t tried @thecravecookies yet, you are totally missing out! Their Pistoffee cookie is to die for and I created a copycat for you guys! It’s loaded with salted pistachios, toffee chunks and semi sweet chocolate! The perfect sweet and salty treat!

I brought these cookies to Bunco last week and girls were stashing them in their bags to take home, they are that yummy!
