The bright yellow hue comes from the passion fruit puree and the yellow cake mix.

This cake, much like my Triple Chocolate Bundt Cake, uses the method of doctoring up a cake mix to make it extra easy to throw together last minute. Yellow cake mix, passion fruit puree, pudding mix and sour cream are the key ingredients in the base of this cake. What really makes this cake over the top delicious however, is the passion fruit glaze that gets poured all over the top of the cake right when it comes out of the oven, soaking into all the little nooks and crannies so that you get that passion fruit flavor in every single bite. Don’t let this cakes simple look fool you, it is full of flavor and doesn’t need one ounce of frosting, the glaze is all it needs!

Tips & Tricks:
- I prefer to use Pilsbury or Duncan Hines cake mix, but any cake mix brand will do!
- You can substitute the passion fruit entirely in this cake and use lemon juice instead for a Lemon Sunshine Cake
- You can switch out the pudding mix flavor for vanilla, french vanilla, white chocolate or cheesecake, depending on what’s available at your local grocery store or in your pantry!
- If you want to spice up the looks of the cake a little bit, you can serve each slice with a dollop of whipped cream!

Description
This cake is so easy and tastes like it came straight out of a pastry shop. Lilikoi (passion fruit) is the star of the show in this incredibly moist cake. Perfect for all the citrus lovers out there!
Ingredients
For the cake:
- 1 box yellow cake mix
- 1 small box instant pudding mix, vanilla or cheesecake flavor
- 1/2 cup passion fruit puree
- 1/4 cup water
- 3/4 cup oil
- 4 eggs (room temp)
- 1/2 cup sour cream (room temp)
- 1/ 3 cup sugar
For the soaking syrup:
- 2 cups powdered sugar
- 1/3 cup passion fruit puree
- 2 tbsp butter, melted
- 2 tbsp water
Instructions
For the cake:
- Preheat oven to 350 degrees.
- Using a large mixing bowl combine cake mix, sugar and pudding mix.
- In a separate medium sized bowl whisk together water, puree, oil, eggs and sour cream. Whisk until smooth.
- Pour the liquid mixture into the dry mixture and stir until smooth.
- Spray a 9×13 pan liberally with cooking spray.
- Pour the cake batter into the pan and bake for 30-35 minutes or until a toothpick entered in the center of the cake comes out clean or with a few moist crumbs on it.
- While the cake is baking, prepare the soak.
- In a medium sized bowl combine all the soak ingredients and stir until smooth.
- Immediately after the cake comes out of the oven, poke holes all over the cake using a skewer or a fork.
- Slowly pour the glaze evenly over top of the warm cake.
- Let the cake cool completely and then serve.
