
In my opinion, there is no such thing as too many peach recipes. I seriously eat at least one peach a day during peach season. Up until this point my Peach Crack Bars have been my favorite peach dessert but these Peach Blondies come pretty dang close to tying my all time favorite. I came up with the idea for these blondies when I was craving something chewy like a brownie but was also craving peaches, so I married the two and ultimately came up with a delicious Peach Blondies.

I took these blondies on a girls trip to Bear Lake and they were a hit! By the end of the night we were eating them straight out of a pan with a fork! The best part is, they are super simple. The blondie batter comes together in less than 10 minutes and while the blondies bake you can whip up the frosting in about 5 minutes. The hardest part is waiting for the blondies to bake and cool.

Tips & Tricks:
- I know a lot of people prefer to peel peaches before using them in a dessert but I honestly prefer to keep them on. You can do either but it’s much easier if you just leave the skins on!
- If you are not a fan of almond flavor, you can substitute the almond extract for vanilla extract instead.
- If you are wanting to make this ahead of time, do not cut your fresh peaches for the top until right before serving. You can bake the brownies and frost them up to 24 hours in advance, just don’t add the peaches on top until you’re ready to serve them.

Description
Peach cobbler meets a blondie. A homemade blondie base with fresh peaches baked in, topped with a whipped cream frosting and loads of fresh chopped peaches!
Ingredients
For the blondies:
- 1 cup salted butter, melted
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 eggs, room temp
- 1 tsp almond extract
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 cups fresh diced peaches
For the frosting:
- 1 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/4 cup sugar
For the topping:
- 3–4 medium sized peaches, diced
Instructions
For the blondies:
- Preheat the oven to 350 degrees.
- In a stand mixer or with a hand mixer mix together sugars, melted butter, eggs and almond extract on medium speed for 2-3 minutes until smooth.
- In a separate medium sized bowl whisk together flour, salt, baking powder and baking soda.
- Stir the flour mixture into the sugar mixture until no flour streaks remain.
- Fold the 2 cups of chopped peaches into the batter.
- Spray a 9×13 pan liberally with cooking spray and spread the blondie evenly into the pan.
- Bake for 40-50 minutes or until the middle is no longer jiggly when you shake the pan.
For the frosting:
- While the blondies bake, prepare the frosting.
- Using a hand mixer or a stand mixer, whisk heavy whipping cream and sugar until stiff peaks form. Remove and put into a separate bowl.
- Using the same bowl that you just made the whipped cream in, add softened cream cheese and powdered sugar, mix on medium speed until smooth.
- Fold the whipped cream into the cream cheese mixture and stir until homogeneous.
Assembly:
- Once the blondies are baked and have cooled completely, frost them with the whipped cream frosting.
- Spread the fresh chopped peaches evenly over the top of the frosting.
- Serve immediately or store in the fridge until ready to eat.
- Store any leftovers in an airtight container in the fridge.
