Soda Cracker Pie

This is a classic recipe from my childhood. I grew up making and eating this pie with my grandma every year at Thanksgiving. It wasn’t until adulthood that I realized most people had never had or even heard of this amazing pie. It’s simple and the ingredients are a little weird but it is hands down always the first pie gone at Thanksgiving and my number one favorite pie of all time!

Tips & Tricks:

  • Make sure your egg whites are whipped to a stiff peak and fold in the sugar a little bit at a time, not all at once, being careful to not deflate the egg whites.
  • If you are not a fan of almond flavor, substitute it with vanilla extract.

Description

The easiest pie you will ever make! This Soda Cracker Pie is my favorite pie in the world. A mixture of saltines and walnuts are coated in a homemade meringue and then baked and topped with fresh made whipped cream. The perfect mix of salty, sweet, creamy and crunchy!


Ingredients

Scale
  • 32 Saltine Crackers (crushed into nickel and quarter sized chunks)
  • 1 cup white sugar
  • 1 cup chopped walnuts
  • 1 tsp baking powder
  • 3 egg whites
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp almond extract

Instructions

  1. Preheat the oven to 350 degrees.

  2. Beat egg whites with a hand mixer or a stand mixer fitted with a whisk attachment until stiff peaks are formed.

  3. Fold sugar and baking powder into egg whites a spoonful at a time being careful not to deflate the egg whites.

  4. Fold in saltines and walnuts.

  5. Add mixture to a sprayed and greased 9 inch pie pan.

  6. Bake for 20 minutes. Remove and let cool completely.

  7. Meanwhile make the whipped cream. Add whipping cream, powdered sugar and almond extract to a bowl and beat until stiff peaks are formed.

  8. Once the pie is cooled, top with whipped cream. The pie is best chilled overnight but can also be eaten immediately if needed. Store leftovers in the refrigerator.
