
Happy Thursday! My life has been absolutely crazy lately. Between traveling nonstop and never ending housework and yard work, my life has been hectic. I am excited to finally have a few minutes to share my Thai Cucumber Salad with you guys. This simple but flavorful side dish is so easy to throw together and goes great with any main dish!
If you grew cucumbers in your garden this year like I did, you probably have more cucumbers than you know what to do with! This is my new favorite way to use up those extra cucumbers. The sauce starts with Thai Sweet Chili Sauce, which can be found in the Asian food isle at your local grocery store, and then gets some sugar, vinegar, sesame oil and salt added to it, creating the easiest most flavorful sauce ever.

Tips & Tricks:
- If you own a mandolin, use it! It ensures even cutting on all your cucumbers and cuts them in a matter of seconds. Just watch those fingers!
- Sesame oil and sweet chili sauce can be found on the Asian isle of your local grocery store.
- I don’t peel my cucumbers but you can if you would like to!


Thai Cucumber Salad

Description
Crunchy cucumbers tossed in a sweet and spicy Thai dressing. The perfect vegetable side dish!
Ingredients
- 2 large cucumbers, sliced thin
- 1/2 bunch green onions, sliced
- 1/3 cup cilantro, finely chopped
- 2 tbsp honey roasted peanuts, chopped
- 1/4 cup Thai sweet chili sauce
- 1 tbsp white vinegar
- 2 tbsp sugar
- 1/4 tsp sesame oil
- 1/2 tsp salt
Instructions
- In a small bowl whisk together sweet chili sauce, vinegar, sugar, sesame oil and salt. Whisk to combine.
- Add sliced cucumbers, cilantro and green onions to a large bowl. Toss to combine.
- Pour dressing over top of the cucumbers and stir until all the cucumbers are coated.
- Fold in chopped peanuts.
- Store in the fridge until ready to serve.
